Step-by-Step Instructions:
Prepare the Lion's Mane Mushroom:
Drizzle a skillet with oil and sprinkle a pinch of salt.
Place the mushroom in the pan and move it around to coat it with heat.
Rest another pan or plate on top of the mushroom (without pressing).
Sear and Shape the Mushroom:
Flip the mushroom after a slight sear develops, and repeat the process with the plate on the other side.
Continue until the mushroom flattens into a steak-like shape.
Marinate the Mushroom:
In a bowl, combine beetroot juice, garlic powder, soy sauce, onion powder, smoked paprika, salt, pepper, and olive oil.
Coat the mushroom in the marinade, ensuring all crevices are covered. Refrigerate for at least 15 minutes.
Prepare the Tzatziki:
