Ingredients

🍝 1 pound of pasta
🧀 2 blocks of feta cheese
🍅 Cherry tomatoes (approximately 1 pint)
🌿 Fresh basil (for garnish)
🧄 10 cloves of garlic
🫒 1/2 cup of olive oil
🌿 1 tablespoon oregano
🌶️ 1 tablespoon of crushed red peppers (or to taste)

Instructions

1- Preheat the Oven:

  • Set your oven to 400°F (200°C).

2- Prepare the Baking Dish:

  • In a large baking dish, add cherry tomatoes and whole garlic cloves.
  • Drizzle with olive oil.

3- Season:

  • Sprinkle oregano, crushed red peppers, salt, and pepper over the tomatoes and garlic.
  • Toss until everything is well coated with the oil and spices.

4- Add Feta Cheese:

  • Place the blocks of feta cheese in the center of the baking dish.
  • Drizzle a bit more olive oil on top of the feta.
  • Optionally, sprinkle some more oregano and crushed red peppers over the cheese.

5- Bake:

6- Cook the Pasta:

  • Once the baking dish is out of the oven, use a fork to crush and combine the cherry tomatoes, garlic, and baked feta cheese into a creamy sauce.

8- Combine:

  • Add the cooked pasta and some fresh basil leaves to the baking dish.
  • Mix everything together until the pasta is well coated in the sauce.
  • If needed, add some reserved pasta water to reach the desired consistency.
