This bold and zesty marinated olive mix is packed with flavor from fresh herbs, citrus, and aromatic spices. Perfect as a party appetizer, a mezze side, or a flavorful snack on its own.

Ingredients

🫒 1 cup black olives

🫒 1 cup green olives

🌶️ 1/2 cup hot pickled peppers

🧄 2 cloves garlic, thinly sliced

🌿 1/4 cup chopped fresh parsley

🧂 1 tsp salt

🍋 1 tbsp sumac

🌿 1 tsp dried oregano

🌿 1 tsp dried thyme

🍋 Juice of 1 lemon

🫗 1 cup olive oil

🍶 2 tbsp white vinegar

Instructions

1- Combine the Olives:

• In a large mixing bowl, add black olives and green olives.

• Mix to combine.

2- Add Heat and Aromatics:

• Add the hot pickled peppers and sliced garlic.

• Toss gently to distribute evenly.

3- Add Herbs and Seasonings:

• Sprinkle in the chopped parsley, salt, sumac, oregano, and thyme.

• Mix to coat the olives well with herbs and spices.

4- Add Acid and Oil:

• Pour in the lemon juice and white vinegar.

• Stir to incorporate.

5- Finish with Olive Oil:

• Pour in the olive oil and toss everything together thoroughly.

• Let sit at room temperature for at least 1 hour.

6- Serve or Store:

• Serve immediately or refrigerate in an airtight container for up to one week.

• Stir before serving.
