These Mini Pesto Chicken Pizzas are a delightful and easy-to-make treat that’s perfect for a quick meal or party appetizer. Combining the savory flavors of pesto and mozzarella with succulent chicken and fresh veggies, these pizzas will have everyone coming back for more.

Ingredients

🍗 1 store-bought rotisserie chicken or grilled chicken, shredded
🌿 1/2 cup pesto sauce
🍞 4 mini naan breads
🧀 1 1/2 cups shredded mozzarella cheese
🧅 1/2 red onion, thinly sliced
🍅 2 tomatoes, thinly sliced


Instructions

1- Preheat the Oven:

  • Preheat your oven to 375°F (190°C).

2- Prepare the Chicken:

  • If using a rotisserie chicken, remove the meat from the bones and shred it into small pieces. Set aside.

3- Arrange the Naans:

  • Place the mini naan breads on a baking tray lined with parchment paper.

4- Spread the Pesto:

  • Evenly spread about two tablespoons of pesto sauce over each naan, covering the surface.

5- Assemble the Pizzas:

  • Sprinkle a generous amount of shredded mozzarella cheese over the pesto.
  • Evenly distribute the shredded chicken on top of the cheese.
  • Add the sliced red onions and tomatoes over the chicken.
  • Sprinkle a little more mozzarella cheese on top of each pizza.

6- Bake:

  • Place the tray in the preheated oven.
  • Bake for 10 to 15 minutes, or until the cheese is completely melted and the naan bases become golden and crispy.
