Warm up on a chilly day with this creamy, hearty White Chicken Chili. This delicious dish is perfect for using up leftover chicken and comes together quickly for a cozy meal. Packed with flavor, it's sure to become a comforting favorite in your home.

Ingredients

🐔 3 cups of cooked and shredded chicken
🧈 2 tablespoons of unsalted butter
🫒 1 tablespoon of olive oil
🧅 1 large onion, chopped
🧄 3 cloves of garlic, minced
🌶️ 1 bell pepper, any color, diced
🌶️ 1 jalapeño, finely chopped
🧀 4oz of cream cheese
🥬 8oz of fresh spinach
🌽 2 cups of corn
🥫 2 cans of great northern beans, drained
🍅 1 10oz can of diced tomatoes with green chilies
🥛 1 cup of heavy cream
🧃 1 32oz carton of chicken broth
🧄 1 teaspoon of garlic powder
🧅 1 teaspoon of onion powder
🌶️ 1 teaspoon of paprika
🌶️ 1 teaspoon of chili powder
⚫️ 1 teaspoon of black pepper
🌿 1 teaspoon of cumin
🌿 1 teaspoon of oregano
🧂 1/2 teaspoon of salt


Instructions

1- Prepare the Base:

  • In a large pot, melt the unsalted butter with olive oil over medium heat.

2- Sauté Aromatics:

  • Add the chopped onion and minced garlic to the pot and sauté for about a minute until fragrant.

3- Add Peppers:

  • Mix in the diced bell pepper and finely chopped jalapeño.
  • Cook for another minute to soften.

4- Combine Chicken and Beans:

  • Stir in the cream cheese until melted.
  • Add the shredded chicken, corn, great northern beans, and diced tomatoes with green chilies.

5- Season and Simmer:

  • Add the garlic powder, onion powder, paprika, chili powder, black pepper, cumin, oregano, and salt.
  • Mix thoroughly.

6- Add Liquids:

  • Pour in the heavy cream and chicken broth, stirring to combine.
  • Cover the pot and let it simmer on low heat for about 30 minutes.

7- Finish with Spinach:

  • In the last five minutes of cooking, add the fresh spinach, allowing it to wilt into the chili.
