Ingredients:

🍁 1/3 cup maple syrup
🥥 2 tbsp coconut oil
🥜 1/3 cup peanut butter
🌾 1 cup oats
🌾 1 cup oat flour
🫐 1 cup blueberries
💧 1/4 cup water

Instructions:

  1. Prep your loaf tin by greasing it or lining it with parchment paper to prevent sticking.
  2. Take a saucepan and add the blueberries and water. Place it over medium heat.
  3. Bring the blueberry mixture to a boil, then reduce the heat to medium-low and allow it to simmer for 5-7 minutes. Stir occasionally, mashing the berries slightly to release their juices.
  4. In a separate bowl, combine maple syrup, coconut oil, peanut butter, oats, and oat flour. Mix well until the ingredients come together to form a sticky mixture. Adjust with more peanut butter if it's too dry or more oat flour if it's too wet.
