Ingredients:
🍁 1/3 cup maple syrup
🥥 2 tbsp coconut oil
🥜 1/3 cup peanut butter
🌾 1 cup oats
🌾 1 cup oat flour
🫐 1 cup blueberries
💧 1/4 cup water
Instructions:
- Prep your loaf tin by greasing it or lining it with parchment paper to prevent sticking.
- Take a saucepan and add the blueberries and water. Place it over medium heat.
- Bring the blueberry mixture to a boil, then reduce the heat to medium-low and allow it to simmer for 5-7 minutes. Stir occasionally, mashing the berries slightly to release their juices.
- In a separate bowl, combine maple syrup, coconut oil, peanut butter, oats, and oat flour. Mix well until the ingredients come together to form a sticky mixture. Adjust with more peanut butter if it's too dry or more oat flour if it's too wet.
- Reserve about a 1/4 cup of this oat mixture for later use as the topping.
- Press the remaining oat mixture firmly into the bottom of the loaf tin, creating an even base.
- Gently pour the blueberry compote over the pressed oat base, making sure it is spread out evenly.
- Take the reserved oat mixture and crumble it over the blueberry layer to form a streusel-like topping.
- Place the loaf tin in the refrigerator and allow the bars to set until firm.
- Once set, cut into bars and serve chilled. Enjoy your homemade Blueberry Bliss Oat Bars!
