Ingredients:

2 pounds of frozen shredded hash browns
🍅 1 can of Rotel (diced tomatoes and green chilies)
🧀 1 can of cheddar cheese soup
🦃 1 pound of ground turkey or ground beef
🧀 2 cups of shredded cheese (divided)
🥣 1/2 cup sour cream
🌮 1 packet of taco seasoning

Prep Time: 15 minutes
Cook Time: Low for 4 hours / High for 2 hours
Total Time: 4 hours 35 minutes (on low) or 2 hours 35 minutes (on high)
Equipment: Crockpot, Skillet, Spatula

Instructions:

  1. Start by browning your choice of ground turkey or beef in a skillet over medium heat. Once fully cooked, drain any excess fat and set aside.

  2. In your crockpot, add the frozen shredded hash browns as the first layer.

  3. On top of the potatoes, add the can of Rotel, spreading it out evenly.

  4. Pour the can of cheddar cheese soup over the Rotel layer, making sure to cover it fully.

  5. Add the cooked ground meat on top of the soup layer.

  6. Sprinkle 1 1/2 cups of shredded cheese over the ground meat.

  7. In a small bowl, combine the sour cream and taco seasoning packet, mixing well to create a creamy taco sauce.

  8. Dollop the taco sauce evenly over the cheese layer in the crockpot.

  9. Using a spatula, gently mix all ingredients in the crockpot to ensure even distribution of flavors.

  10. Set the crockpot to cook on low for 4 hours or high for 2 hours.

  11. Once the cooking time is complete, stir the casserole thoroughly.

  12. Top the casserole with the remaining 1/2 cup of shredded cheese and place the lid back on the crockpot for an additional 20 minutes, or until the cheese is melted and bubbly.
