Ingredients
🌽 4 ears of corn, husked and cut into 3-4 inch chunks
🧈 Butter or olive oil
🧄 2 cloves garlic, minced
🥛 1/2 cup heavy cream
🍗 1/4 cup chicken broth
🥄 A little mayonnaise
🧀 Grated Parmesan cheese
🌶️ Red pepper flakes to taste
🌿 Thyme to taste
🧄 Garlic powder to taste
🍋 Lemon pepper to taste
🍋 Squeeze of lemon juice
🌿 A sprinkle of tropical Sazon (or chili powder) for a razzle dazzle and tropical taste
🌿 1 tablespoon chopped fresh parsley for garnish
Instructions
1- Prepare the Corn:
- Husk the corn and cut each ear into 3-4 inch chunks.
- Ensure the pieces are uniform for even cooking.
2- Air Fry the Corn:
- Preheat the air fryer to 400°F (200°C).
- Place the corn chunks in a single layer in the air fryer basket.
- Cook for 10-12 minutes, turning halfway through, until they are golden brown and slightly charred.
3- Heat the Pan:
- In a large skillet, heat the butter or olive oil over medium heat.
- Wait until the mixture is hot.
4- Add the Garlic:
- Add the minced garlic to the pan.
- Sauté for 1-2 minutes until fragrant, being careful not to let it burn.
5- Make the Sauce:
- Reduce the heat to low and pour in the heavy cream and chicken broth.
- Add a little mayonnaise and stir to combine.
- Stir in the grated Parmesan cheese until melted.
- Season with red pepper flakes, thyme, garlic powder, lemon pepper, a squeeze of lemon juice, and tropical Sazon (or chili powder).
6- Combine with Corn:
- Add the air-fried corn chunks to the skillet.
- Let the mixture simmer gently for about 5 minutes, stirring occasionally, until the sauce thickens slightly and the corn is tender.
7- Serve:
- Remove from heat and garnish with chopped fresh parsley.
- Serve warm as a delicious side dish.
