Ingredients
For the Chicken:
🍗 2 chicken breasts
🥄 2 tablespoons yogurt
🌶️ 1 teaspoon paprika
🧂 1 teaspoon Sazón mix
🧄 1 teaspoon garlic powder
🧅 1 teaspoon onion powder
🧂 1/2 teaspoon black pepper
🍇 1 tablespoon grape seed oil
For the Cucumber Pico:
🧅 1/2 red onion, diced
🥒 1 cucumber, diced
🍅 1 tomato, diced
🌶️ 1 jalapeño, minced
🌿 2 tablespoons cilantro, chopped
For the Avocado Mayo:
🥑 1 ripe avocado, mashed
🍋 1 tablespoon lemon juice
🧄 1 teaspoon roasted garlic, minced
🧈 1 tablespoon butter
🌿 1 teaspoon parsley, chopped
🥄 2 tablespoons yogurt (optional for extra creaminess)

Instructions
1- Prepare the Chicken Marinade:
In a bowl, mix the yogurt, paprika, Sazón mix, garlic powder, onion powder, and black pepper.
Add the chicken breasts to the marinade and ensure they are evenly coated. Let them marinate for at least 15 minutes in the refrigerator for deeper flavor absorption.
2- Grill the Chicken:
Heat a cast iron skillet over medium heat and add grape seed oil.
Place the marinated chicken breasts into the skillet. Cook for about 6-7 minutes on each side or until the chicken is golden brown and has nice grill marks.
For additional flavor, squeeze fresh lemon juice over the grilled chicken while it's cooking.
Once cooked, remove the chicken from the skillet and let it rest.
3- Prepare the Cucumber Pico:
In a separate bowl, combine the red onion, cucumber, tomato, jalapeño, and cilantro.
Mix well and set aside.
4- Make the Avocado Mayo:
In a bowl, mash the avocado and mix in lemon juice and roasted garlic.
In a pan, melt butter and mix in parsley.
Add the parsley-butter mixture to the avocado mash and stir in optional yogurt for extra creaminess.
5- Assemble the Dish:
Spread the avocado mayo onto a plate or serving dish.
Place the grilled chicken breast on top, followed by a generous topping of cucumber pico.
Serve with additional fresh lemon slices if desired.
