Dive into a flavorful fusion of juicy grilled chicken topped with creamy avocado mayo and a refreshing cucumber pico de gallo. This recipe brings together a perfect balance of spices and fresh ingredients, making it a delightful dish for any meal.

Ingredients

For the Chicken:

🍗 2 chicken breasts

🥄 2 tablespoons yogurt

🌶️ 1 teaspoon paprika

🧂 1 teaspoon Sazón mix

🧄 1 teaspoon garlic powder

🧅 1 teaspoon onion powder

🧂 1/2 teaspoon black pepper

🍇 1 tablespoon grape seed oil

For the Cucumber Pico:

🧅 1/2 red onion, diced

🥒 1 cucumber, diced

🍅 1 tomato, diced

🌶️ 1 jalapeño, minced

🌿 2 tablespoons cilantro, chopped

For the Avocado Mayo:

🥑 1 ripe avocado, mashed

🍋 1 tablespoon lemon juice

🧄 1 teaspoon roasted garlic, minced

🧈 1 tablespoon butter

🌿 1 teaspoon parsley, chopped

🥄 2 tablespoons yogurt (optional for extra creaminess)

Optional:

🍋 Additional lemon for squeezing over the chicken


Instructions

1- Prepare the Chicken Marinade:

  • In a bowl, mix the yogurt, paprika, Sazón mix, garlic powder, onion powder, and black pepper.

  • Add the chicken breasts to the marinade and ensure they are evenly coated. Let them marinate for at least 15 minutes in the refrigerator for deeper flavor absorption.

2- Grill the Chicken:

  • Heat a cast iron skillet over medium heat and add grape seed oil.

  • Place the marinated chicken breasts into the skillet. Cook for about 6-7 minutes on each side or until the chicken is golden brown and has nice grill marks.

  • For additional flavor, squeeze fresh lemon juice over the grilled chicken while it's cooking.

  • Once cooked, remove the chicken from the skillet and let it rest.

3- Prepare the Cucumber Pico:

  • In a separate bowl, combine the red onion, cucumber, tomato, jalapeño, and cilantro.

  • Mix well and set aside.

4- Make the Avocado Mayo:

  • In a bowl, mash the avocado and mix in lemon juice and roasted garlic.

  • In a pan, melt butter and mix in parsley.

  • Add the parsley-butter mixture to the avocado mash and stir in optional yogurt for extra creaminess.

5- Assemble the Dish:

  • Spread the avocado mayo onto a plate or serving dish.

  • Place the grilled chicken breast on top, followed by a generous topping of cucumber pico.

  • Serve with additional fresh lemon slices if desired.
