Ingredients
🐟 2 salmon fillets
🍯 3 tablespoons honey
🧄 3 cloves garlic, minced
🍋 1 tablespoon soy sauce
🌶️ 1 tablespoon Sriracha (optional for heat)
🍋 Juice of 1 lemon
🧂 Salt and pepper to taste
🥔 4 medium red potatoes
🌿 2 tablespoons butter
🥛 1/4 cup milk
🧂 Salt and pepper to taste
🥦 1 bunch broccolini
🫒 1 tablespoon olive oil
🧂 Salt to taste
Instructions
1- Prep and Cook the Potatoes:
- Peel and chop the red potatoes into even-sized chunks. Place in a large pot and cover with water. Add a pinch of salt.
- Bring to a boil over high heat, then reduce the heat to medium and simmer until the potatoes are tender, about 15-20 minutes.
- Drain the potatoes and return them to the pot. Add butter, milk, salt, and pepper. Mash until smooth and creamy. Set aside.
2- Prepare the Honey Garlic Glaze:
- In a small bowl, mix honey, minced garlic, soy sauce, Sriracha (if using), lemon juice, salt, and pepper. Stir to combine.
3- Cook the Salmon:
- Preheat your oven to 400°F (200°C).
- Place the salmon fillets on a baking sheet lined with parchment paper. Brush the glaze generously over the salmon.
- Bake for 12-15 minutes or until the salmon is cooked through and flakes easily with a fork.
4- Cook the Broccolini:
- While the salmon is baking, heat olive oil in a skillet over medium-high heat.
- Add the broccolini and sauté for about 5-7 minutes, until they are tender-crisp. Season with salt.
5- Assemble the Salmon Bowl:
- In a serving bowl, place a scoop of mashed potatoes, a salmon fillet, and a portion of sautéed broccolini.
- Drizzle any remaining glaze over the top of the salmon for extra flavor.
