This delicious Spicy Salmon Spaghetti combines tender chunks of salmon with a savory Alfredo sauce and roasted red peppers over a bed of perfectly cooked spaghetti. Ingredients
🍝 250g spaghetti
🐟 300g salmon fillet, skinless and cut into chunks
🌶️ 1 teaspoon chili flakes
🧄 3 cloves garlic, minced
🫒 2 tablespoons olive oil
🍋 Juice of half a lemon
🥫 1 cup Alfredo sauce
🌶 1/2 cup roasted red bell peppers, sliced
🌿 A handful of fresh basil leaves, torn
🧂 Salt to taste
🧄 Freshly ground black pepper to taste
Instructions
1- Prepare the Pasta:
- Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.
2- Cook the Salmon:
- Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the salmon chunks and season with salt and pepper. Cook for about 4-5 minutes, gently turning until the salmon is cooked through and golden brown on the outside. Remove the salmon from the pan and set aside.
3- Make the Sauce:
- In the same skillet, add the remaining tablespoon of olive oil.
- Add the minced garlic and chili flakes, and cook for an additional minute until fragrant.
- Pour in the Alfredo sauce and roasted red bell peppers, bringing the mixture to a gentle simmer. Season with salt and pepper.
- Let the sauce cook for about 5 minutes, allowing the flavors to meld together.
4- Combine:
- Add the cooked spaghetti and salmon back into the skillet with the Alfredo sauce.
- Toss everything together, adding a bit of the reserved pasta water if the sauce is too thick.
- Stir in the lemon juice and fresh basil leaves.
5- Serve:
- Divide the salmon spaghetti among plates, garnishing with additional basil if desired. Serve immediately and enjoy!
