Stuffed onion boil with a spicy twist offer a delightful fusion of flavors. This recipe combines hearty ingredients like potatoes and shrimp with the kick of hot sauce, perfect for a flavorful main dish.
Ingredients
🧅 4 large onions
🥚 4 hard-boiled eggs, chopped
🥔 2 medium potatoes, peeled and boiled until tender
🦐 200 grams (about 7 oz) shrimp, cooked and chopped
🫒 2 tablespoons olive oil
🧄 2 cloves garlic, minced
🌶️ 1 teaspoon paprika
🌿 1 teaspoon dried thyme
🧂 Salt and pepper, to taste
🌶️ 2 tablespoons of your favorite hot sauce (such as Sriracha, Tabasco, or a local specialty)
🌿 Fresh parsley, chopped, for garnish
Instructions
1- Prepare the Onions:
- Peel the onions and cut off the tops. Carefully core the centers using a spoon or melon baller, leaving a thick shell. Reserve the onion cores for the stuffing mixture.
- Blanch the onion shells in boiling water for about 5 minutes to soften them slightly. Remove and drain well.
2- Make the Filling:
- Heat the olive oil in a skillet over medium heat. Add the minced garlic and cook until fragrant.
- Chop the reserved onion cores finely and add them to the skillet. Sauté until they become translucent.
- Add the cooked and chopped shrimp to the skillet, followed by the paprika and thyme. Stir well to combine.
- Mash the boiled potatoes in a bowl and add them to the skillet, mixing everything together.
- Stir in the chopped hard-boiled eggs. Season the mixture with salt and pepper to taste.
- Add the hot sauce to the mixture and stir until evenly incorporated.
3- Stuff the Onions:
- Preheat your oven to 180°C (350°F).
- Stuff each onion shell with the filling mixture, pressing down gently to compact it.
- Place the stuffed onions in a baking dish. Drizzle a little olive oil over the tops.
4- Bake:
- Cover the baking dish with foil and bake in the preheated oven for about 25-30 minutes, or until the onions are tender and cooked through.
5- Serve:
- Remove from the oven and let them cool slightly.
- Garnish with chopped parsley before serving.
