Ingredients
🥫 1 can (15oz) pumpkin puree
🧂 1/4 tsp vanilla extract
🎃 1/4 tsp pumpkin spice
🍚 1/3 cup white sugar
🧀 1 cream cheese
🍬 1/4 cup powdered sugar
🥧 2 packs of pie crust (preferably Pillsbury brand)
🥚 Egg wash (1 egg + 1 tbsp water)
🍚 1 cup white sugar
💧 3 tbsp water
Instructions
1- Prepare the Pumpkin Filling:
- In a mixing bowl, combine the pumpkin puree with vanilla extract, pumpkin spice, and white sugar.
- Mix well until all the ingredients are fully incorporated.
2- Cream Cheese Mixture:
- In another bowl, mix the cream cheese with powdered sugar until smooth.
- Transfer the cream cheese mixture into a piping bag for easy application.
3- Prepare the Pie Crusts:
- Roll out the pie crusts and cut them into rectangles.
- Brush the edges of each rectangle with the egg wash made from mixing one egg with a tablespoon of water.
4- Assemble the Pies:
- Pipe a strip of the cream cheese mixture in the center of half of the pie crust rectangles.
- Add a generous spoonful of the pumpkin filling on top of the cream cheese.
- Place another rectangle on top of each filled piece, gently press the edges with your fingers to seal, and trim to maintain a neat shape.
5- Finish the Pies:
- With a sharp knife, make a small slit at the top of each pie to allow steam to escape during baking.
- In a small saucepan over high heat, combine 1 cup of white sugar with 3 tablespoons of water. Stir and heat until the sugar melts and bubbles.

6- Bake:
- Preheat your oven to 450°F (232°C).
