Ingredients

For the marinade

🌶️ 4 guajillo peppers, seedless

🧅 1/2 onion

🧄 6-8 garlic cloves

🍅 3 Roma tomatoes

🌿 1/4 tsp of cumin seeds

For the skewers

🐖 1 lb of pork rib meat, cut into large cubes

🫑 1 bell pepper, cut into large cubes

🧅 1/2 onion, cut into large cubes

🥒 2 white zucchinis, sliced thickly (about 2 cm)

🧂 Salt to taste

🧂 Black pepper to taste

Instructions

1. Make the marinade

o Add the guajillo peppers, onion, garlic, and tomatoes to a pot. Cover with water and boil for 15 minutes or until tender.

o Blend the cooked ingredients with cumin seeds until smooth. Let the marinade cool before adding it to the meat.

2. Prepare the meat and vegetables

o Cut the pork rib meat into large cubes, about 1 inch thick. Place the meat in a bowl, season with salt and black pepper, and pour the cooled marinade over it. Mix well and let it marinate (the longer, the better).

o Cut the bell pepper and onion into large cubes to match the size of the meat. Slice the zucchini into thick slices.

3. Prepare the skewers

o Soak bamboo skewers in cold water for at least 30 minutes to prevent burning.

o Thread the ingredients onto the skewers in the following order: onion, pork, bell pepper, zucchini, and repeat two more times.

4. Grill the skewers

o Preheat the grill to medium-high heat. Place the skewers on the grill and cook, turning occasionally, until the pork reaches an internal temperature of 145-150°F (63-65°C). Avoid overcooking to prevent dryness.

5. Serve
