Elevate your breakfast or brunch with this delightful Avocado and Egg Toast, featuring creamy avocado, perfectly cooked eggs, and sweet peppers, all garnished with tangy pickled onions and queso fresco. This quick and easy recipe is bursting with flavor and sure to kick-start your day!

Ingredients

🥑 1 avocado
🧂 1 tsp everything seasoning
🌶 1/2 tsp pepper flakes
🫒 2 tsp olive oil
🫑 2 small sweet peppers
🍞 2 slices of bread
🥚 2 eggs
🧅 Red pickled onions
⚫ Black sesame seeds for garnish
🧀 Queso fresco for garnish


Instructions

1- Prep the Avocado Mixture:

  • Cut the avocado in half, remove the pit, and scoop the flesh into a bowl.
  • Add the everything seasoning and pepper flakes to the avocado.
  • Stir in 1 teaspoon of olive oil to combine everything into a smooth mixture.

2- Prepare the Sweet Peppers:

  • Thinly slice the sweet peppers.
  • Heat 1 teaspoon of olive oil in a pan over medium heat.
  • Add the sliced sweet peppers to the pan and sauté until they are slightly softened. Remove from heat and set aside.

3- Cook the Bread:

  • Use the same pan or a grill pan if you prefer, and lightly toast the bread slices until they are golden and crispy.

4- Cook the Eggs:

  • Use a non-stick pan or the same pan for convenience, add a little more olive oil if necessary.
  • Fry or scramble the eggs to your liking.

5- Assemble the Toast:

  • Spread the avocado mixture generously onto the toasted bread slices.
  • Layer the sweet peppers evenly over the avocado spread.
  • Place the cooked eggs on top of the sweet peppers.

6- Add Finishing Touches:

  • Sprinkle black sesame seeds over the top for an extra crunch.
