Instructions
1. Prepare the Eggplant
o Slice the eggplant into thin rounds.
o Sprinkle with a pinch of salt on both sides and let sit for 10 minutes to remove excess moisture.
o Pat dry with a paper towel.
2. Season the Eggplant
o In a small bowl, mix paprika, crushed chili flakes, dried oregano, white pepper, and salt.
o Coat each eggplant slice with the seasoning mixture evenly on both sides.
3. Cook the Bacon
o Heat a skillet over medium heat and cook bacon slices until crispy.
o Remove the bacon and place it on paper towels to drain. Once cooled, crumble into small pieces.
4. Assemble the Crescent Pizza
o Preheat the oven to 375°F (190°C) or according to the crescent dough package instructions.
o Line a baking sheet with parchment paper. Roll out the crescent dough onto the prepared baking sheet, pinching the seams together to form a flat pizza base.
o Layer the seasoned eggplant slices evenly over the dough.
o Add tomato slices on top of the eggplant.
o Sprinkle chopped parsley and crumbled bacon over the layers.
o If using, sprinkle shredded cheese on top.
5. Bake
o Bake in the preheated oven for 15-20 minutes, or until the crescent dough is golden brown and cooked through, and the cheese (if added) is melted and bubbly.
6. Serve
o Remove from the oven and let cool for 5 minutes.
o Garnish with additional parsley before slicing. Serve warm.
