Ingredients:
🐔 6 shredded chicken thighs (boil with
3 tbsp chicken bouillon,
Salt & and pepper to taste,
Onions
Garlic
Celery
Carrots
🌮 12 tortillas
🧀 1 cup of mozzarella cheese + extra for topping
🥫 1 can of cream of mushroom soup
🥫 1 can of cream of chicken soup
🌶 1 cup of salsa verde (homemade or store-bought)
🌿 Fresh cilantro for garnish
🛢️ Oil for frying tortillas
Instructions:
- Prepare the Chicken:
Boil the chicken thighs seasoned with chicken bouillon, salt, and pepper to your taste. For extra flavor, add in onions, garlic, celery, and carrots while boiling. Once cooked, shred the chicken thighs. - Preheat the Oven:
Preheat your oven to 375°F (190°C). - Fry the Tortillas:
In a pan, heat oil and lightly fry each tortilla until they are just soft but not crispy. Remove and set them on paper towels to absorb excess oil. - Mix Chicken Filling:
In a bowl, combine the shredded chicken with 1 cup of mozzarella cheese. Mix well. - Assemble the Enchiladas:
Spray a glass or ceramic, oven-safe dish with cooking spray. Place a portion of the chicken and cheese mixture onto each tortilla, then roll them up tightly. Arrange the rolled tortillas seam-side down in the prepared dish. - Prepare the Sauce:
