Instructions

1. Prepare the pico de gallo

o Combine the diced Roma tomatoes, onion, and jalapeños in a bowl.

o Add lime juice, salt, and black pepper to taste. Mix well and set aside.

2. Grill the onions

o Slice the onion and wrap it in aluminum foil with butter and a sprinkle of salt. Place on the grill and cook until tender.

3. Prepare the hot links

o Wrap each hot link with a strip of bacon and secure the ends with a toothpick. Grill until the bacon is crispy and the hot links are cooked through.

4. Toast the baguettes

o Cut each French baguette into 3-4 pieces, depending on their length. Slice each piece like a hotdog bun, without cutting all the way through. Warm the baguette pieces on the grill.

5. Assemble the hotdogs

o Spread mayonnaise and mustard inside the toasted baguette bun. Place the grilled hot link inside and top with ketchup.

o Add grilled onions and finish with a generous spoonful of pico de gallo.

6. Serve

o Enjoy these hotdogs fresh off the grill with a side of chips or a cold drink.

Cooking and Serving Tips

• For extra spice, add diced serrano peppers to the pico de gallo or drizzle with hot sauce.

• Swap the French baguette with bolillo bread for a traditional Mexican touch.

• Grilled jalapeños make a fantastic topping or side.
