Ingredients
🍝 1 pack (7 oz) Alphabet macaroni/pasta
🍅 1 Roma tomato
🧄 2 garlic cloves
🧅 1 small onion
💧 8 cups of water or chicken stock
🧂 1 teaspoon of salt
🍗 1 teaspoon of chicken bouillon
🥄 2-3 tablespoons of cooking oil
Instructions
1- Prepare the Veggie Blend:
Blend the Roma tomato, garlic cloves, and onion in a blender.
For enhanced color, you may add a can of tomato puree.
Blend until smooth, ensuring there are no visible skins or seeds, and set aside.
2- Fry the Pasta:
In a large pot, heat the cooking oil over low heat.
Add the alphabet pasta and stir regularly, frying until it turns golden brown.
3- Combine and Simmer:
Pour the blended vegetable mixture into the pot with the pasta.
Add the remaining water or chicken stock and stir to combine.
Introduce the salt and chicken bouillon, adjusting to your taste preference.
4- Cook the Soup:
Increase the heat to medium, cover the pot with a lid, and let the soup come to a boil.
Once boiling, allow it to simmer for around 10-15 minutes, or until the pasta is tender and the flavors are melded.
5- Serve:
Once the soup is cooked, serve it hot.
