This frozen treat is inspired by the classic Mexican spicy watermelon lollipop. Ingredients

🍉 8 cups diced watermelon

💧 1 cup water

🌶️ Thai Chili Pepper Honey (to taste)

🍯 1/2 cup chamoy

🌶️ 1/4 cup Tajín

🍉 4 cups diced watermelon rind

🍋 Juice of 1 lime

💧 4 cups water

Instructions

• Prepare the Red Watermelon Mixture

o If your watermelon is not seedless, strain the mixture into a pitcher to remove seeds.

o Add chamoy and 1/4 cup of Tajín to the blended mixture and stir well.

• Fill the Popsicle Molds (Red Layer)

o Pour the red watermelon mixture into the popsicle molds, leaving about 2 centimeters of space at the top for the green layer.

o Insert the popsicle sticks and freeze for at least 2 hours.

• Prepare the Green Watermelon Rind Mixture

o In a blender, combine the diced watermelon rind, lime juice, 4 cups of water, and more Thai Chili Pepper Honey to taste. Blend until smooth.

o Strain the mixture into a clean container to extract the liquid.

o Add green food colorant to enhance the color and stir until evenly mixed.

• Fill the Popsicle Molds (Green Layer)

o Remove the molds from the freezer and fill the remaining space with the green mixture, topping off each mold.

o Freeze for an additional 3 hours or until completely solid.

• Remove the Popsicles from the Molds

o Submerge the bottom of the molds in warm water for a few seconds to loosen the popsicles.

o Carefully remove each popsicle and place them in individual small plastic bags or sandwich zip bags for storage.
