Welcome to a delightfully simple and tantalizing dish straight from Ashus Delicacies’ recipe collection. Today, we are going to create Butter Garlic Potatoes that are so delicious; you will be tempted to make them repeatedly. A perfect side dish for any meal, these potatoes are crispy on the outside and tender on the inside, and the aroma of garlic and herbs will fill your kitchen as they cook.

Ingredients:

- 500g small potatoes, with skins

- Water, as required for boiling

- Salt, to taste

- 1 tablespoon unsalted butter, and more for final sauté

- 1/4 teaspoon black pepper powder

- 1/4 teaspoon red chili powder (adjust to taste)

- Optional: Mixed dried herbs, to taste

- 2 large tablespoons garlic, finely chopped

- Fresh coriander (cilantro) leaves, finely chopped for garnish

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Equipment: Pan, Knife, Cutting Board

Servings: 2-3

Instructions:

1. Start by thoroughly washing and cleaning the 500g of small potatoes. Boil them in a pot with water and a little salt until they are soft yet firm enough to hold shape. Be careful not to overcook, as they will be fried later.

2. Once the potatoes are done, drain the water and let them cool. After cooling, cut the potatoes into halves.

3. Heat a pan over high heat and add 1 tablespoon of butter, spreading it around to cover the pan's surface.

4. Place the potato halves cut side down into the melted butter, letting them fry until they achieve a good golden color. Lower the heat to medium so as not to burn them.

5. Flip the potatoes to fry the skin side for 2-3 minutes, being careful not to overcook, as the skins can come off.

6. Season the potatoes with 1/4 teaspoon of salt, black pepper, red chili powder, and optional mixed herbs to your taste. Stir well to coat the potatoes with the seasoning evenly.

7. Add another heaped tablespoon of butter and the chopped garlic to the pan. Toss and fry lightly for about half a minute.

8. On medium heat, mix well, making sure the garlic does not burn and coats the potatoes evenly.

9. Finally, sprinkle with finely chopped fresh coriander leaves and give it a slight mix just to incorporate.

10. Serve your Butter Garlic Potatoes hot and enjoy them as a snack with your favorite sauce or as an accompaniment to your main meal.

Cooking Tips:

- New potatoes work best for this recipe as their skins are tender and delicious when fried.

- Adjust the chili to your spice preference.

- The second addition of butter adds a rich finish and helps the garlic adhere to the potatoes, enhancing the flavor.
