Instructions:

1. Prepare a baking sheet by lining it with parchment paper or wax paper for easy cleanup. Set aside.

2. In a large mixing bowl, cream together 1 cup of peanut butter with 5 tablespoons of unsalted butter until well combined.

3. Add 1 teaspoon of vanilla extract and mix until incorporated.

4. Gradually, add in 2 cups of powdered sugar, one cup at a time, and beat until the mixture becomes thick and dough-like. Remember to scrape down the sides of the bowl to ensure even mixing.

5. Once the mixture is thoroughly combined and has the consistency of play-doh, use a small spoon or scoop to portion out the mixture. Aim for scoops that weigh about 20 grams each.

6. Roll each portion into a smooth ball and place it on your prepared baking sheet.

7. If the mixture starts to stick to your hands, wash them or lightly dust with powdered sugar for easier handling.

8. When all the balls are formed, place the baking sheet in the refrigerator for at least 30 minutes to firm up.

9. Near the end of the chilling time, prepare the chocolate coating. In a microwave-safe bowl, combine 2 cups of semi-sweet chocolate chips with 2 teaspoons of coconut oil.

10. Melt the chocolate in 30-second bursts in the microwave, stirring between bursts, until mostly melted. Remove from microwave and stir until smooth and fully melted. Be careful not to overheat.

11. Once the peanut butter balls are chilled, dip each one into the melted chocolate, leaving a small circle exposed at the top to mimic the appearance of a buckeye nut.

12. Place the chocolate-dipped buckeyes back on the baking sheet, and return to the refrigerator until the chocolate sets.
