This fusion recipe is perfect for those who love the crisp, golden shell of traditional samosas but crave a filling that's bursting with the bold flavors of Mexico. Ingredients:

For the Samosa Dough:

- 2 cups of plain flour

- 1/2 cup of water (adjust as needed)

- 1/4 cup of vegetable or sunflower oil

- 1/2 teaspoon of salt

For the Mexican Filling:

- 2 small chicken breasts or ground beef, finely chopped

- Juice of 1 lime

- 2 cloves of garlic, minced

- A handful of fresh coriander (cilantro), chopped

- 1 medium onion, finely chopped

- 1 bell pepper, finely chopped

- 1/2 cup of sweetcorn

- 2 tablespoons of smoked paprika

- 1 tablespoon of olive oil

- 1 teaspoon of cayenne pepper (adjust to taste)

- Salt and pepper to taste

- 2 tablespoons of tomato puree

Prep Time: 30 minutes

Cook Time: 30-40 minutes (deep frying) or 30 minutes (baking)

Total Time: 1 hour - 1 hour 10 minutes

Servings: 16 samosas

Instructions:

1. In a mixing bowl, whisk together the flour and salt. Add the oil and rub it into the flour with your palms until the mixture resembles coarse breadcrumbs. Gradually add water to form a stiff but smooth dough. Knead briefly, then cover with cling film and set aside.

2. Prepare the filling by heating a tablespoon of olive oil in a pan. Sauté the onions and bell pepper until softened. Add the garlic and cook for another minute.

3. Add the chicken to the pan and cook until it's golden and cooked through. Stir in the sweetcorn, smoked paprika, cayenne pepper, tomato puree, and lime juice. Cook for a few more minutes, then remove from heat and stir in the chopped coriander. Season with salt and pepper to taste.

4. Divide the samosa dough into 8 equal pieces and roll each into a circle. Cut the circles in half to make 16 semicircles.

5. Take one semicircle, brush a bit of water along the straight edge, and fold it to form a cone shape. Press the edges together to seal.

6. Fill the cone about three-quarters full with the chicken mixture. Wet the inside edges with water and press to seal the samosa.

7. In a deep fryer or a large, deep pan, heat oil to around 350°F (approx. 175°C). Carefully lower the samosas into the oil without overcrowding the pan. Fry until golden brown and drain on kitchen paper.

8. For a healthier option, preheat the oven to 390°F (200°C), brush the samosas with oil, and bake for about 30 minutes.

9. Serve your Mexican-Style Chicken Samosas hot with your choice of dipping sauce, and enjoy the burst of flavors!
