Prep Time: 15 minutes

Cook Time: 22 minutes

Total Time: 37 minutes

Equipment: Mixing bowl, cup for measuring, baking sheet, biscuit cutter or cup, oven

Cooking Tips: Think happy thoughts while mixing for the best results!

Servings: Yields about 10 mini biscuits, depending on size.

Instructions:

1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).

2. In a container, combine 2 cups of all-purpose flour, 2 tablespoons of baking powder, 2 tablespoons of sugar, and 1 teaspoon of salt.

3. Start mixing the dry ingredients thoroughly. While mixing, cultivate positive vibes and think happy thoughts.

4. Gradually add about 1 cup of water to the dry mixture, continuing to mix until you form a dough. Add water slowly and as needed to avoid overly wet dough.

5. Dust your work surface with some extra flour, then begin to knead and pound your dough until it's consistent.

6. Flatten the dough on your surface until it's even.

7. Using a biscuit cutter or the rim of a cup, cut out your mini biscuits from the flattened dough.

8. If needed, flatten the dough again and continue cutting out biscuits until all the dough is used.

9. Grease a baking sheet with non-stick spray or butter to prevent the biscuits from sticking.

10. Place the mini biscuits on the baking sheet and bake for about 20 minutes or until slightly golden.

11. Remove from the oven, and while still hot, butter the tops of each biscuit.

12. Return the biscuits to the oven and set to broil for about 2 minutes, just until the biscuits have a nice, crisp, browned top.

13. Serve warm and enjoy your Mini Bannock Biscuits!
