Socca is a delightful and simple French flatbread made with chickpea flour. It's naturally gluten-free and rich in plant-based protein, making it a perfect choice for those seeking a nutritious and satisfying meal option. With just four basic ingredients and endless possibilities for flavor enhancements, Socca is a quick and versatile dish that can be enjoyed on its own or as a base for your favorite toppings.

Ingredients

🥄 1 cup chickpea flour
💧 1 cup water
🫒 1 1/2 tablespoons olive oil (plus extra for the pan)
🧂 3/4 teaspoon salt
Optional: 🧄 Garlic powder or freshly minced garlic, 🌿 Freshly minced rosemary

Instructions

1- Mix the Batter:

  • In a large bowl, combine 1 cup of chickpea flour with 1 cup of water. Mix well until smooth and free of lumps.
  • Add in 1 1/2 tablespoons of olive oil and 3/4 teaspoon of salt. Whisk until the batter is smooth and runny.

2- Optional Flavor Additions:

  • If desired, add garlic powder, freshly minced garlic, or rosemary to the batter for added flavor. Mix well.

3- Rest the Batter:

  • Let the batter rest for about 30 minutes to allow the chickpea flour to absorb the moisture. This step can be skipped if you're in a hurry, but resting will yield a better texture.

4- Prepare the Oven and Skillet:

  • Preheat your oven to 450°F (230°C). Place a 10-inch cast iron skillet in the oven to heat up.

5- Prepare the Skillet:

  • Once the oven is preheated, carefully remove the hot skillet using oven mitts.
  • Add about 1/2 tablespoon of olive oil to the pan and swirl it around to coat the bottom and sides evenly.

6- Cook the Socca:

  • Pour the batter into the hot skillet, ensuring it spreads evenly.
  • Place the skillet back in the oven and bake for 20 minutes until the edges are golden brown.
  • For an extra crispy top, you can turn on the broiler for the last 1-2 minutes of cooking.

7- Serve:

  • Carefully lift the Socca out of the skillet and slice it into desired portions.
  • Serve as a standalone flatbread, pair it with your favorite soup or dip, or use it as a gluten-free pizza crust.

8- Storing Leftovers:

  • Store any leftover Socca in an airtight container in the fridge for up to one week.
