Ingredients
🧅 1 kg of onions (red or white)
🧈 50 g of Normandy butter
🍷 1 cup of white wine
🍞 1 baguette
🧀 Gruyère cheese
🧂 Salt (to taste)
🧂 Pepper (to taste)
Instructions
1- Prepare the Onions:
- Peel and slice the onions thinly
- Set aside until ready to cook
2- Caramelize the Onions:
- In a heavy pot, melt 50 g of Normandy butter over medium heat
- Add the sliced onions and cook until soft and golden brown (10-15 minutes)
- Season with salt and pepper
3- Deglaze with Wine:
- Pour in the white wine and increase the heat to high
- Stir and let the wine reduce by half (5-7 minutes)
4- Simmer the Soup:
- Add water or broth to cover the onions and bring to a simmer
- Reduce heat, cover, and let simmer for about 45 minutes
5- Prepare the Toppings:
- Slice the baguette and toast the slices in the oven until crisp
- Grate the Gruyère cheese
6- Finish and Serve:
- Preheat the oven to 180°C (350°F)
- Ladle the soup into oven-safe bowls
- Top each with toasted baguette and grated Gruyère
- Bake for 3 minutes until cheese is melted and bubbly
