- Salsa Verde (for serving)
- Sliced ham (for Sincronizada)

- Tomato (sliced, for Sincronizada)
Instructions:
1. For the first quesadilla, drizzle a little bit of oil on your preheated griddle and place two corn tortillas to begin heating up. Flip them to get a bit of oil on both sides.
2. Sprinkle Oaxaca cheese generously onto one half of each tortilla, making sure to spread it evenly.
3. Fold the tortillas in half over the cheese to create a half-moon shape and press them down with a spatula or quesadilla press.
4. Cook until the cheese is melted and the tortillas have a golden brown crust, usually about 2 minutes per side. Remove from the griddle and let them rest momentarily before serving.
5. Serve with a side of guacamole and salsa verde for dipping.
6. To create the Sincronizada, lay a flour tortilla on the griddle and layer it with sliced ham, shredded lettuce, and tomato slices.
7. Place another flour tortilla on top, press gently, and cook until the cheese is melted and the tortillas are crispy, flipping once to ensure even cooking.
8. Remove from the griddle, cut into triangles, and enjoy hot.
