Ingredients

🥩 1 pound thinly sliced ribeye steak or lean beef
🌿 1 tablespoon olive oil
🌶 1 green bell pepper, thinly sliced
🧅 1 medium onion, thinly sliced
🧄 2 cloves garlic, minced
🧀 2 cups shredded provolone or mozzarella cheese
🌿 Salt and pepper to taste
🌯 4 large flour tortillas
🫒 2 tablespoons butter


Instructions

1- Prepare the Vegetables and Steak:

  • In a large skillet over medium heat, add olive oil. Once heated, sauté the onion and green bell pepper until they're soft, about 5 minutes.
  • Add the garlic and continue sautéing for another minute until fragrant.
  • Push the vegetables to one side of the skillet and add the sliced steak to the other side. Season the steak with salt and pepper.
  • Cook the steak until it's browned and cooked through, about 3-5 minutes.
  • Mix the vegetables and steak together and set aside.

2- Assemble the Quesadilla:

  • In a clean skillet over low-medium heat, melt 1/2 tablespoon of butter.
  • Place one flour tortilla in the skillet and sprinkle evenly with 1/2 cup of the shredded cheese.
  • Add a generous portion of the steak and vegetable mixture, then another 1/2 cup of cheese on top.
  • Place another tortilla on top and press down gently.
  • Cook until the bottom tortilla is golden brown and the cheese has started to melt, about 3-4 minutes.

3- Flip and Cook:

  • Carefully flip the quesadilla using a spatula. Add another 1/2 tablespoon of butter to the skillet if needed.
  • Cook until the second side is golden brown and all the cheese is melted.
  • Remove from the skillet and let it rest for a minute before slicing.

4- Serve:

  • Slice each quesadilla into wedges and serve immediately with your choice of salsa, sour cream, or guacamole.
