🥚 1 Egg
🍬 60g (6 Tbsp) Sugar
🥛 130ml Milk
🧂 2g (1/2 Tsp) Salt
🌿 1 Tsp Vanilla extract
🌾 150g (1 1/4 cup) Cake flour or all-purpose flour
🥄 5g (2/3 Tbsp) Baking powder
🫒 50ml Cooking oil
🧈 10g Unsalted butter
🍯 15g (1.5 Tbsp) Unrefined sugar or regular sugar
🍌 2 Bananas
Prep Time: 15 minutes
Cook Time: 30 minutes
Total Time: 45 minutes
Equipment: 20cm Small frying pan

Instructions:

  1. Begin by slicing the bananas to your desired thickness and set them aside.
  2. In a bowl, whisk together the egg and 60g of sugar until well combined.
  3. Gradually pour in the milk, mixing continuously, then season with the salt and vanilla extract.
  4. Sift in the cake flour and baking powder, mixing them into the wet ingredients until you have a smooth batter.
  5. Next, heat the cooking oil in the 20cm small frying pan over low heat. The size of the pan is crucial to get the proper thickness for your cake.
  6. In the meantime, melt the unsalted butter in another pan. Add the unrefined sugar and cook over low heat until it dissolves and mixes with the butter to form a syrup.
  7. Pour this syrup into the bottom of the preheated pan and arrange the banana slices over the syrup layer to cover the pan bottom.
  8. Over low heat, carefully pour the batter over the bananas in the pan.
  9. Cover the pan and cook for approximately 25 minutes on very low heat, checking occasionally. If the sound of cooking is too loud, reduce the heat further. If there’s no cooking reaction after 5 minutes, increase the heat slightly.
