What's On The Menu Today? #22 - WHAT'S COOKING CHALLENGE (Part 3)

This is my third take on "What's Cooking Challenge" by @jaynie!

I was tagged by @iamjadeline and @kimmiecfields some time ago. Sorry for the late foodie aka cooking post at my end; I just have not had the chance to take time off to do cooking due to travelling and crazy teacher-month in May. Today's recipe is a Chinese-inspired dish, here comes my sweet-and-sour chicken! Like always (based on my kitchen's inspiration), this dish will not take a long time to prepare and cook, and most of the ingredients may already exist in your kitchen cabinet and refrigerator. So, let's get started!

Ingredients: (for 3 - 4 pax)

  1. 45 g of cornstarch
  2. 500g of boneless, skinless chicken breast
  3. 2 eggs
  4. One green bell pepper
  5. 3/4 cup of apple cider vinegar
  6. 1 tablespoon of soy sauce
  7. 1/4 cup of tomato ketchup
  8. Black pepper and salt for seasoning
  9. Oil
  10. 4 - 5 cloves of fresh garlic
  11. 20 g of white sesame seeds
  12. Some chopped scallions
    *Please change the above measurements to suit your taste palette. :)

Steps for the chicken:

  • Chop the chicken into smaller pieces, preferably about same sizes so that it is easier to manage the cooking time.
  • Heat up your pan over a medium-high heat for about 3 minutes.
  • Lightly toast the white sesame seeds in the pan.
  • While waiting, beat the eggs in a bowl.
  • Place the cornstarch in another bowl.

  • Take out the lightly toasted sesame seeds from the pan.
  • Add some oil into the pan, and leave it for about 5 to 8 minutes.
  • Season the chicken with some salt and pepper.
  • Coat the chicken with cornstarch, and dip them in the beaten egg mixture before frying them in the pan.
  • You need to do this in few batches, and cooking alert! OIL SPLATTER!
  • Fry until they are golden, crispy and cooked through. Take it out and set aside in a plate.

Steps for the sweet-and-sour sauce:

  • In a separate pan, add some oil and heat it up to a medium-high heat for about 3 minutes.
  • While waiting, chop the fresh garlic, scallion and green bell pepper.
  • Fry the garlic chunks until your kitchen smells darn awesome.
  • Add the apple cider vinegar, soy sauce, ketchup, and sugar. Leave it for about 4 minutes.
  • Add the green bell pepper, and wait until the sauce thickens.

  • Do some quick tasting, and adjust further to your liking.
  • Add the fried chicken into the thickened sauce.
  • Toss them around so that they are fully coated with the sauce.
  • Add the lightly toasted sesame seeds.
  • AND YOUR DISH IS READY! :D

I had my dish with some organic brown rice I bought from the mall.

Ever since I moved out of my home country, I have started cooking a lot more, and just experimenting with different recipes. It worked brilliantly, and at times, things have gone wrong in the kitchen too. HAHAHAA! Oh welp! :D

Thank you for sharing this. We always do the corn starch coating but never the egg dip afterwards, so will definetly be adding that the next time. The toasted sesame seeds also sounds like a good secret taste weapon.

Hehehee, yes, toasted sesame seeds is the way to go! It adds another subtle taste to the dish. :)

Looks divine! I love how sesame seeds taste, who would have thought such a tiny addition would be the cherry on top to a meal!

I always use cornstarch to thicken things, but for some reason had no idea that I could coat chicken before to fry it up! Seriously, I'm so excited to try this :)
