Fish Recipes #2: Fresh salmon with lemon and parsley

Yesterday I managed to buy some beautiful fresh salmon, so I decided to cook it just with some white wine, lemon and fresh parsley. It took me no more than 15 minutes to prepare it, but the result was delicious and healthy. So, here’s the recipe.

Ingredients (4 people):

  • 4 salmon slices
  • 2 spoons of oil
  • flour (to flour the salmon)
  • 1/2 lemon juice
  • 2 spoons white wine
  • 1 teaspoon chopped parsley
  • 2 garlic cloves
  • salt and pepper

Directions

  • Bone and skin the salmon. This step is optional, but doing this you will obtain a dish easier to eat and you won’t have to worry about the fish bones.
  • Put the two garlic cloves with some oil in a frying pan and heat it.
  • Flour the salmon and then add it to the pan. Fry it for about five minutes per side. The cooking time can vary according to how thick the slice is.
  • Add the white wine and let it evaporate for a couple of minutes.
  • Then add the lemon juice and some parsley on each side and let cook for other two minutes. Since the salmon was floured, you should obtain a creamy sauce. Add some salt and pepper to adjust the flavour.
  • Ready to eat! You can serve it with some side vegetables. For example I used pan cooked spinach

How do you usually cook fresh salmon?

The use of lemon and wine make this fish crispy and somewhat like mouthwatering but not more until you don't use salt.

I usually add some salt and pepper at the end, but not during the cooking, since salt can drain fish juices and make it become dry.

Nice recipe, I'll try it since it can be prepared quickly and the result seems delicious!

hi, why didnt you mince the garlic? :) does its juice extract by itself?

The garlic gives flavour to the oil and so to the fish. The salmon taste is very delicate and the minced garlic can cover it.
