Welcome to Sunday Supper: Slow Cooker edition
Cooking is such a beautiful expression of creativity. The most simple ingredients can be transformed into a palate pleasing meal.
When I cook I plan my meals based on what I'm craving. Sometimes my cravings take me down the healthy path and other times the path is a little more hearty.
BEWARE...Today is going to be a hearty meal day. If you need vegetables then this is not your meal. unless you consider fresh tomato and green onions as your daily vegetable.
Ingredients:
- 6 chicken breasts
- 1 32oz carton chicken broth
- 1 hidden valley dry ranch packet
- 1 8oz container of whipped cream cheese
- 1 8oz pack of shredded sharp cheddar cheese
- 1 3oz pack of Hormel Real bacon crumbles
- 1-2 lbs Oreida tator-tots
- FatMatts BBQ sauce
- Diced tomatoes
- Diced green onions
Directions:
- Place all 6 chicken breasts in your crockpot
- Pour your chicken broth in the crockpot being sure to cover
- Set your crockpot on high and cook till your chicken temperature reads 165 degrees (3-4hrs)
- Once your chicken reaches the desired temperature take it out of the crockpot and place it on a cutting board to cool.
- Preheat your oven to 400 degrees for tots
- Put some parchment paper onto your cookie sheet then place tator-tots on top.
- Cook tots to your desired crunchiness (20-30minutes)
- Shred your chicken and place extra shredded chicken into leftover containers.
I portioned out 2 breasts for this meal. You can freez the unseasoned portions (I had two leftover containers with two breast per container) then use later in the week for other meals - In a large bowl mix together:
whipped cream cheese
hidden valley dry ranch packet
chicken broth to help melt and mix the ingredients - Add shredded chicken to the bowl of ranch cream cheese mixture.
- Take your tots out of the oven and add cheddar cheese then bacon crumbles to the top of tots
- Place tots back into the oven to melt the cheese
- While cheese is melting dice your tomatoes and green onions
- Remove tots and dinner is ready to be constructed

- Drizzle Fat Matt's BBQ sauce
- Diced tomatoes and green onions
Grab your napkin and fork and let your palate and stomach be satisfied and full.
