Maximizing those peppers and couscous, we see! Waste not, want not!
We also do this, but without the mozzarella cheese (which is a nice touch). Leftover couscous, bulgar wheat or quinoa salad, we just stuff it in peppers or courgettes (a bit more difficult and not as filling). Now, we have a craving for jacket potatoes?! How did that happen?
