The Realization
It was 2012 and I was 250 lbs. I felt terrible, looked terrible in my own eyes, and was struggling with blood pressure problems. We had just finished up this wonderful trip to St. Croix and I returned with a new found determination. I no longer wanted to go on feeling the way I did and was concerned about my health.
Beginning in the fall of 2012, I began my journey to better health. It started with evaluating my relationship with food and some basic exercise. I'm now about 190 lbs and happy with where I'm at physically, but more importantly, I'm happy with the way I FEEL.
I found that my body seemed to be insulin sensitive. It was like a potato would make me feel terrible. Numerous blood sugar checks didn't show I had any diabetes or pre-diabetic tendencies, at least in the pure medical sense, but those starches and sugars just made me feel terrible. I have come to believe that I would be classified as just insulin sensitive.
Because of this, I've tried to adopt a more low carb approach to my eating. It's not for everyone and I fully support my vegan, vegetarian, gluton free, or whatever else works best for you friends. I simply want to share my particular journey and what has worked for @captainbob.
Below is a pizza recipe that I've used to fill that craving for pizza that I love. It's low carb and I hope you enjoy it.

Recipe
1 1/2 cups shredded mozzarella
3/4 cup of almond flour
2 tbsp cream cheese
1 egg
garlic powder, onion powder, italian seasoning
parchment paper
Put mozzarella & cream cheese in a medium sized microwavable bowl
Microwave for 1 min, stir and then another 30 sec, stir - very hot!
Stir in egg and almond flour
wet hands and spread dough thin on parchment paper
Poke rows of holes with fork to avoid bubbling
Sprinkle with onion power, garlic powder, and italian seasoning
Put in pre-heated 425 degree oven
After 8 minutes, check it and poke holes in any bubbles
Continue cooking for another 4-6 minutes until slightly brown on top
Top with sauce, toppings, and cheese. Bake until golden and crispy.

First, congrats on the weight loss. You comment on someone else's video that I responded to makes more sense now - about the 80% diet and 20 exercise.
My weakness is bread. I love bread. Especially toasted, with salted butter. Man.
The only pizza base alternative I was aware of is using cauliflower. I going to have to try this one.

I completely understand on the bread. Don't get me wrong, I love the carbs. I love sugar. They taste great and are almost intoxicating to me. The problem for me was the way they made me feel and the way I respond to them. I still them occasionally, I just make it a special occasion as opposed to my regular diet. Congrats on your health journey. That recipe looks great! Have you tried it with any other types of gluten-free flour? I have nut allergies in my house.
I have not although I have heard of folks substituting Parmesan cheese, although I've not tried that myself.
