Do you ever make quiche and/or frittatas? Whenever I have a ton of eggs, I grab whatever veg I have in the fridge (like kale, spinach, peppers, green onions) and get to cracking (pun intended). I’m really partial to a spinach, mushroom, onion, and sausage quiche, super yum!
Also, it’s summer and homemade frozen custard is sublime and uses all the yolks lol!
Quiche, eh? I've never made it before, but I could give it a try. Also custard, I forgot about custard. I usually make pumpkin custard pies (my adoptive mother's favourite) in late autumn and throughout the winter, but that's not the time of year when I have a massive surplus of eggs.
Now that I think of it, is frozen custard the summer dessert choice of chicken farmers, and ice cream the summer dessert choice of dairy farmers?
