BAKED AND CURRIED

Wazzup food fighters its FRIDAY! I had to make something with the last drabs left in the fridge, really need to go shopping. I found some cabbage and aubergine, basically I baked them and made a curry nut sauce, oh and some fancy yellow rice, it came out not too bad I must say, but hot as hell.

So I got myself 1 aubergine or eggplant, I prefer aubergine, because it sounds fancy and it looks nothing like an egg

Slice

Then I cut some lines in it

A few squirts of liquid smoke

Then I found some cabbage

Threw everything on a tray and banged it in the oven

A little more scavenging in the fridge I found some onions, garlic and chillies

CHOP

I lightly oiled the pan, chucked in some mustard seeds

Then fennel seeds

Then pumpkin seeds

Once it starts popping in with the onions

Chillies up next

Then garlic

I then made some veggie stock with vegan billion powder 2 teaspoons

Now comes the spices, 3 teaspoons madras curry powder

1 teaspoon garam masala

image

1 teaspoon ground coriander

image

1 teaspoon mother in law's tongue curry powder

Then I add the veggie stock and two cups of water

While that was simmering away I made the nut sauce, just some cashews that where soaked and blended with nutritional yeast flakes

Threw everything on a plate

And dumped some curry sauce on it

And that is what I came up with, the last few things I had left, now I only have light in the fridge.

I never thought to throw the cabbage in the oven ! Let us try that :) , thanks for the hint !

Wow, @gguy773. I do have to say that I would not have come up with any of that if that's all that were left in my refrigerator to cook. I'd probably be eating out and wondering I was going to do next. :)

This seems like a lot of improvisation, or was this actually from a recipe? It just read like you knew what to throw in.

And I can imagine that it was pretty hot by the time you got done with all the curries and all the chili peppers. Smokin'!

Nah, just doin my thang. Give a hungry man an aubergine and a cabbage and he will make a curry. If that isn't a saying, I just said it, peace out!
