Hi again. Hope you challenged yourself yesterday. Here is today's challenge!
Feel free to add this onto yesterday's challenge but most importantly complete the day's challenge.
Fitness Challenge
Take the stairs. Do you normally take the elevator? Today, challenge yourself to take the stairs. Going up to floor 10? Commit to the stairs for a few floors then add on another flight the next trip. No stairs? Park further away from your destination. Not the front row parking space at the store.
Nutrition Challenge
Have a salad for dinner without dressing.
Try this simple salad:
Cut up butter lettuce from Costco; pre - shredded, bagged, organic carrots; slice a cucumber; add some kalamata olives; sugar plum grape tomatoes; and avocado (whole avo if making it for more than one person/1/4 if for yourself).
Substitute dressing by squeezing lemon over the salad and drizzle 1 tbsp of olive oil and 1 tbsp of basalmic vinegar, salt and pepper. The avocado and olives in the salad help fill you up and add flavor so dressing is not needed.
I will be adding a beef patty to my salad for protein. The Organic Beef is from Costco. I make palm size patties and grill them on the grill until dark pink in the inside. Then, place on my salad. It helps fill me up.
If you are on the go and eating out, you can still order a garden salad with olive oil and basalmic vinegar on the side. Add a side of avocado and a side of beef patty, chicken or fish.

I had a soup I call "green goop" made of whole tomatillos, sliced bok choy, diced green onions, and shredded spinach simmered in miso, turmeric and a little meatless "chicken" stock. I can eat it alone or top it with steamed dumplings, fish, or fried raisins.
