You're right, it is subjective and I love so many for different reasons. If I had to pick one, it would be the lotus for it's elegance, symmetry, and symbolism.

This quotation is attributed to the Buddha:

“As a lotus flower is born in water, grows in water and rises out of water to stand above it unsoiled, so I, born in the world, raised in the world having overcome the world, live unsoiled by the world.”

Its form is frequently found in Buddhist art, and it even inspired this Baha'i House of Worship.
