Thanks for this post. I really love this recipe as it's relatively simple and easy to prepare. It also looks quite naturally quite colorful. I might try to grill the eggplant and tomatoes instead here instead of frying it to try to add a bit of a smoky flavor to the vegetables.

OOHHH! I love aubergines so much.
I can literally just slice one up, roast it with some olive oil, and eat it by itself.
This si very similar to an Italian dish called Aubergine parmigiana.

Very cool combo of eggplant, eggs and cheese - and it's shaped like a tower too, very aesthetically pleasing on the eyes! I could totally see this being the main course too since eggs with eggplant can be pretty filling as well as very salubrious. Thanks for sharing this recipe Alla!
