🍲 30-MIN DINNER | KOREAN-STYLE RED SPLIT LENTIL STEW WITH QUINOA 🍲

in #food7 years ago

A perfect weeknight dinner. Though I haven't used enough chilis or chili paste to make this a Korean dish, I love fusion food. That's the beauty of cooking... you get to combine flavors, texture, and weird ingredients you got to know through your passion for food and in our case travel too.

Though I have never been to Korea, which is def on the list, we have eaten at so many Korean places before and always left with a happy belly. Sometimes a bit too much on fire, though. I must say they love it spicy.

Just as so many other Asians. I have a friend here in Cambodia who always adds at least ten small Thai chili peppers to her bowl... I call that crazy. Wouldn't survive a heat attack on my mouth like that.

That's why I always love to make chili paste so I can add some to the dish and put a bowl on the table for people, like my hubby, who like more heat.

You can check out my homemade chili paste recipe HERE.

KOREAN-STYLE RED SPLIT LENTIL STEW WITH QUINOA

INGREDIENTS (Serves 2)

For the sauce:

¾ cup onion, chopped
2 cup napa cabbage, chopped
2 clove of garlic, minced
1-inch fresh ginger, grated
½ cup red lentils
1 cup water
2 tbsp soy sauce or tamari
1 tbsp sesame oil
Chili paste to taste
½ cup uncooked quinoa
1/3 cup spring onions, finely chopped
2-4 tbsp toasted sesame seed, I used black ones

DIRECTIONS

  1. Heat the cooking oil in a skillet over medium heat, Saute the onion for 2-3 minutes. Then add garlic and ginger and cook for 1-2 minutes more.
  2. Stir in napa cabbage and cook until it starts to soften.
  3. Then add the lentils, water, soy sauce, sesame oil, and chili paste. Cover and bring to a gentle simmer until the lentils are cooked and tender while most of the liquid is absorbed. This will take about 8 to 10 minutes.
  4. Meanwhile, cook the quinoa according to the instructions on the package.
  5. When ready, divide stew over bowls. Top with spring onions and sesame seeds. Serve with quinoa on the side.

Very nice recipe! I like one pot dishes because they are simple and quick and there is less to dishwash;) I saw that You add a sesame oil... I love this smell. It make a dish is more asian:)

Staple here in Asia indeed. Love it in dressings and stews so good. Have a lovely day!

Great call on the chili paste! I don't like a ton of heat either, but my boyfriend likes things a little spicy. That's a good idea to leave some out for putting in extra at serving. :)

Make life so much easier. Though I like some heat, my hubby loves a lot of it, many of our friends are not used to it. Hence the separate bowl. Always works.

Hi :) thanks for the recipe, it sound delicious. Do you think I can use regular cabage?

Sure you can. You can add any vegetable you want.

This looks so good! Discovering kimchi and gochujang really opened me up to how great Korean food is. This recipe looks so tasty and I can't wait to try it!

yum!! def trying this! and downloading your ebook since i have way more kale than i know what to do with right now! much love

You can never have too much kale haha. Green smoothies are the best. You can always freeze it too for later. Have a great day!

This looks so delicious! I really should use quinoa more often instead of rice!

Yup. I love its flavor. Buckwheat is so good too. Never been a fan of rice. People here in Cambodia don't get it ;)

I never was a big fan of buckwheat. I tried several times but always found the taste was strange. But recently a friend brought this typical buckwheat tea from japan and I love it. I slowly and gradually approximate to this taste...

I just love its taste but I reckon it might be a bit too much for a lot of people. Never had buckwheat tea.. interesting. Will look for it!
