It's smoothie time again. After being on the road and having friends over for three weeks, I have missed my daily green smoothie. While I had a few and tried to convince my friends to jump on the green smoothie bandwagon too, I had far too few of my favorite drink..... and my tummy can def feel the difference. Time to give it some love...
After my digital hiatus a body detox may not be such a bad idea. It is so strange, although I had a great time, eating too much crap has left my body with low levels of energy, and I'm really looking forward to tons and tons of fresh fruits and vegs.... and feel my normal self again. And what a better way to start with a green smoothie to nurture my overloaded body back to its original state.
Apple & Red Beet Smoothie (serves 2)
- 1/2 cup red beet (raw), chopped (1 small)
- 1 apple, cored
- 1 banana
- 1 cup mixed berries (fresh or frozen)
- 2 cups packed fresh spinach
- 1 cup freshly squeezed orange juice, we used blood oranges
- 1 cup water
- 1-2 tablespoon extra virgin coconut oil
Instructions
- Blend spinach, water, and orange juice until smooth. Add remaining ingredients and blend again.
- Optional: top with superfoods if you like. I topped mine with goji berries and chia seeds.
Recipe Notes
Use one or more frozen fruits to chill the smoothie.
If the smoothie is too thick for you, add more liquid base or water.
If you have a high-speed blender you can throw in everything at once.

That looks delicious and would be a great liver detoxer. It's endlessly fascinating to me how different we all are, and how different our needs. For you, it's the perfect fuel. For me, I'd need to add a lot more fat - something like avocado, coconut cream, eggs or raw cream. Or maybe have it as a starter, with something more substantial afterwards.
True that... smoothies are the perfect breakfast for me and my hubby. We have never been big eaters in the mornings, and smoothies def made a huge difference in our energy levels and health. We do have another piece of fruit (or 2) and/or mixed nuts as an afternoon snack.
