Smoothie of The Day: Minty Bok Choy Smoothie

While I always love to go on an adventure, coming home is great too! The past few days I so missed my green drinks in the morning. While I loved the buffet in the hotel, green smoothies were nowhere to be found! Are you a green smoothie lover too? Here's this mornings yummy drink.

Ingredients (serves 2 for breakfast)

2-3 cups bok choy packed
1 cup papaya chunked
1 cup mango chunked
1 banana chunked
2 cups water
2 tablespoons chia seeds or ground flax seed
1/4 cup fresh mint leaves

Instructions

  1. Blend bok choy, mint, and water until smooth. Add remaining ingredients and blend again. Add water if too thick. If you have a high-speed blender, you can throw in everything at once.
  2. Optional: top with your favorite superfoods like raw cacao nibs or goji berries. Check out the superfood tab in the pantry section for some inspiration.!

bok choy in a smoothie? that might be a first that i've seen such a thing

Any green can actually be added to a green smoothie. Just as spinach, bok choy is ideal for people who don't love a green taste since you won't taste it at all but it will give you tons of benefits to eat your greens at the start of your day.

I've never tried bok choy before, but from the looks of your smoothie, I would say it might be pretty good. :)

It sure is! Nothing better than to start your day with fresh fruits and vegetables.

Great combo. I've never used bok choy in a smoothie before. Swiss chard and beet greens, but never bok choy. Great idea!

You can use any green in a smoothie, but some add a too green taste for many people. We also often add spinach, kale or chard, or watercress and arugula but these def add a green, peppery taste which will not be for everyone.

Thanks for sharing the taste with us @amy-goodrich. If you don't use too much, you should be able to bury the taste somewhat.
