Hi Redheadpei, your pumpkin pies look delicious, something we do not make in Australia. I love pumpkin, we eat Big Blues, Kent and Butternut ones. They are not stringy at all. We boil pumpkin which can either be eaten mashed or in pieces. Baked pumpkin is yummy and of course we make pumpkin soup. I also have put mashed pumpkin in fruit cakes.
