Now that all the Halloween celebrations are over and the decorations have been taken down, I’m going to bring in the two smaller pumpkins I used for decorations and bake them in the oven.
Along with a few large pumpkins, I always try to get a couple of these small pie pumpkins to use for pies. It feels good not to throw them all out in the compost after Halloween.
These are the larger pumpkins I will put in the compost bin.
The two pie pumpkins I am going to use to make a pie.
These pie pumpkins need to be cooked before using for a pie.
Cooking a pumpkin is easy. Cut the pumpkin in two, top to bottom, clean out the seeds and stringy stuff, then drizzle a bit of oil over them before placing cut side down on a tray to bake. They need to be bake in the oven about 50 minutes at 375 degrees.
About halfway through I cover them with tin foil to finish cooking.
Pierce them with a fork to test for doneness as they may need less or more time to bake.
Once the pumpkins are cooked I let them cool down before scooping out the inside to use for making pies. Don’t use the outside skin. Once cooled the pumpkin can be puréed and also frozen to use later. The pumpkin can also be added to muffins or pancakes.
I got a phone call and let them cook a bit longer than needed but they turned out ok.
There’s only three halves here because I ate the other one. The pumpkin tasted a lot like squash. I put some butter , salt and pepper and it was a nice treat.
There’s enough pumpkin to make a couple pies.
To make one pumpkin pie-
Mix together;
- 1 and half cup of the cooked pumpkin
- 2 eggs
- 1/2 cup brown sugar.
- 3/4 cup evaporated milk.
- Add a dash of spices such as allspice, cinnamon, nutmeg. Some add a pinch of cardamom and ginger.
Mix all the above ingredients throughly and put in unbaked pie crust.
Bake at 385 degrees for about 10 minutes then lower to 350 for 30 minutes- cooking about 40 minutes total.
To finish off put a dollop of whipped cream on top.
Most of my pies are made from a tin of pure pumpkin but these Halloween pumpkins will be more flavourful.
Pumpkin is one of my favourite pies. it may not be to everyone’s taste but it has a lot of nutritional valve and vitamin A.
The shape of food supposedly lets us know what part of the body it will help. Perhaps pumpkin is good for stomach problems or the head because of the shape of the pumpkin - mostly round.

Actually it tastes a lot like squash if you were to eat it before making a pie. I scooped out one half and enjoyed it with butter and salt and pepper.

Christmas, and guess who had to help cut up and
De-seed them? You guessed it. To this day
I don't like pumpkin pie, nor sweet

@redheadpei your pumpkins pies look oh so good. I love pumpkin pie, I bet it does taste better than making it from canned pumpkin. My husband picked a bunch of our mulberries and made a pie, his first shot of pie making and he nailed it.

I can almost smell that from here that looks goods! I enjoy pumpkin myself but don’t usefully have any for Halloween. Thanksgiving though I’m looking forward to having some!
With the cinnamon and nutmeg it does give a nice smell throughout the house. 😊

I’ve heard of folks roasting the pumpkin seeds to eat.
Very tasty as a snack or in breakfast mix.

We eat all kinds of pumpkin, but normally skin them and cut the insides into little cubes for cooking in water on the stove.

Of course we also bake the pips separately, as they are also delicious.

I’m glad to give you a different way to cook the pumpkins, Sir Stephen. I find it easier to bake them in the oven. I also cook squash the same way. 🎃
We shall indeed follow your example Lady Jo, as it sounds totally logical to me. In the army days we used to cook whole pumpkins in a fire and only removed the pips afterwards, so your way really makes sense.

Hi Redheadpei, your pumpkin pies look delicious, something we do not make in Australia. I love pumpkin, we eat Big Blues, Kent and Butternut ones. They are not stringy at all. We boil pumpkin which can either be eaten mashed or in pieces. Baked pumpkin is yummy and of course we make pumpkin soup. I also have put mashed pumpkin in fruit cakes.
I am thinking you do not have these in your part to the world. Thank you for your recipe.

Hi Captain! 😊 The smaller pumpkins are suppose to be the pie pumpkins grown especially for eating. I don’t know what the bigger ones would taste like if baked.
Pumpkin pie is my favourite, but I usually cheat and use canned pumpkin, because kids and time is short. Love that you make them from scratch. :)

I am not a big fan of pumpkin pie but this may change me over. Kids do like the roasted seeds we get from our jackolanterns.

There have been times when I’ve tasted ones that didn’t taste that good-perhaps because what was added wasn’t right. One lady I know never seems to cook them enough. She keeps bringing them to occasions and no one will touch them as they know.
