Hello!
Today we have an unusual recipe. The combination of chicken, pears, cinnamon, honey, ginger and cilantro makes this dish unforgettable )).
Difficulty: 6/10
Cooking time: 45 min.
Number of servings: 2-3
Ingredients:
- Chicken fillet (thigh), 360 gr.
- Pear, 1 PC.
- Butter, 30 gr.
- Onion, 1 PC.
- Cinnamon, 10 gr.
- Ginger, 10 gr.
- White pepper, 1 gr.
- Honey, 20 gr.
- Cane sugar, 5 gr.
- Saffron, 2 gr.
- Cilantro, 15 gr.
- Vegetable oil
- Salt
Saffron pour 150 ml of hot water. Onions clean and cut into small cubes, pears clean and cut into slices, ginger grate on a fine grater, cilantro leaves separated from the stems.
In a frying pan, heat the butter and fry the pear over medium heat for five minutes, add honey, sugar, reduce the heat to a minimum and caramelize for five minutes, stirring occasionally, then set aside the pear, save the pan.
Add a little vegetable oil to the pan and fry the onion on high heat for one minute.
Add the chicken, cook for two minutes.
Add ginger, cinnamon, pepper, cilantro, filter saffron infusion, salt to taste, cover with a lid and simmer for ten minutes.
Add to the pan caramelized pear, cook for another seven minutes, then serve, sprinkled with sesame seeds. As a side dish is good rice.
Bon appetit!

Firm note to self: NEVER watch food videos or read food posts when one is hungry and there's not much in the fridge. LOL. Or maybe that's WHY I watch and read them??
Really NICE step by step. Do you think it would work with a firmer Asian style pear? I live in Northern Thailand where we don't get the soft western ones very often (almost never). But I can imagine the flavour combination and am intrigued to try
A person who cooks with real saffron? be still my beating heart!! :)
Much enjoyed, much salivating. Following you from Chiang Mai.
Thank you for your comment :-)
If the pear is hard, cook it longer. You can check the readiness with a knife or spoon. The pear should become soft almost like a ripe mango ))
OK!! now ripe mangoes I understand. LOL.... On it.
That looks really cool. Would love to taste. The photos are making it more effective in making apetize.

whould we fry the onion and in the next steps chicken and the rest of the ingredients on the same pan which we have used before for frying pears and carmelize it with honey ?
Yes, on the same pan.
