Spicy Vegan Creamy Broccoli Cauliflower Soup With Corn Flour Dumplings

I was in the mood for a curry but I didn't have curry powder which is what I would usually use for convenience. If I don't have curry powder I just use cumin, coriander and turmeric. Keep in mind there are many different combinations of spices in this world which will be labeled a type of curry. I look at it as an art, and admire the cooks and cultures that can make particular flavors that are distinct and have their own names. I don't have the patience for that but for now I will do the basic east Asian substitute.

I am here in Acapulco Mexico so I don't have as much to choose from in my neighborhood. My way of improvising was to use cumin which I keep and is used quite a bit here, coriander root which is not the same as the dried but that's all I had, and also fresh turmeric which is used here for something but I don't know what. I just buy fresh turmeric instead of dried. It works well. I love spice so I added a chili, which is often used in eastern cuisine anyway. I added a Mexican twist to it just for fun and it worked out great.

Soup


1 head broccoli chopped
1 head cauliflower chopped
1 carrot
1 onion
3 cloves garlic
Salt to taste
1 teaspoon grated ginger
1 teaspoon grated turmeric or ground
1 chili pepper
1 teaspoon coriander chopped

Saute onions garlic until caramelized than add the the rest of the ingredients. Cover and cook without water for five minutes. Add water just to cover. Or if you want add plant milk. The water worked fine for me. When it's cooked remove and puree in a food processor.

Dumplings

1 cup masa corn flour(for tamales or tortillas)
1/2 to 1cup water
1/2 teaspoon salt
Pinch of baking soda

Slowly add water to the flour salt and baking soda, until you have a soft dough that can be formed into a ball. It is best to let it sit for ten minutes. It sometimes firms up a bit. Roll the balls in extra flour and steam for twenty minutes or until they are cooked all the way through. In the meantime heat up the soup. When the balls are finished, add them to the soup. I garnished it with avocado and tomato and extra steamed broccoli and cauliflower.

This soup would be fine without the dumplings. It was super filling.

This looks delicious, those blas of corn looks a lot like those we prepare here with the dough that we prepare the arepas to the soup we add some balls of those dough

A soup more like cream, is how I like to eat very thick soups and I see that you do not need protein to make it a good soup, that looks very good I liked your recipe @carolynstahl

Thank you. The great thing is that it was thick even without cream or potatoes. Just the vegetables.

I love regular broccoli soup too without chili pepper. I was going for a far east theme this time though:)
