It really is easy. Sure there are a lot of ways to try and add some flavor to the crust, but really this is all you need. I made the one in the pic last night and thought I'd do a post about it. A lot of people seem scared to try this; they think because it's so delicious it must be hard.
- cuts of beef tenderloin
- Salt
- Pepper
- Olive Oil
- Cast Iron Pan

Quality beef and the cast iron pan are must haves. When it comes satisfying the craving for a good steak, my opinion is go for the tenderloin every time. The key to cooking it right is heat, heat, heat. A cast iron pan can get surface of the sun hot and retain that heat, even on an electric burner. The tenderloin must be cut thick, at least 3cm or an inch and a quarter, and can be cut twice as thick if you want(I want).


That's it. Done.

Here are a couple things I'll add when I feel like it. Add fresh rosemary with the salt and pepper. I actually sprinkled some dried rosemary on the ones above but honestly it doesn't really do anything. Needs to be fresh.
A nice one is to add garlic butter. Melt the butter and press some garlic into it. Then pour the butter on each side of the steak for it's last minute in the pan. Pour some of the butter on the steak once it's on the plate too. It's true, butter makes everything better. Except for that movie Last Tango In Paris, ewww.
So, get good meat, let it get to room temp, add oil salt and pepper, use a hot-ass pan, turn it every minute, no more than 5 minutes per side.

Great :-) you can use a normal pan but it may not be as juicy and may destroy your pan, it's gotta be hot! i got that pan on taobao for less than 200rmb so i recommend that ;-)

I did when I lived in Gimhae, now I live in Ulsan where the expat count is a lot lower. Need to make some new friends with cool places around here =)
That sounds like the best way to cook a steak. I have always bungled it and end p with a leathery piece of meat with great taste. lol
I will have make it hotter and flip it more often. Good tips.
If you don't have garlic butter you can add good ol' butter and one glove of garlic. When you're finished you throw it away.
And let it rest for 5-10 minutes.

How long have you had that cast iron pan? It really makes a difference when cooking meat like steak. Delish post!
I probably should have included how to treat the iron pan. I'll do it here, it's very easy, even if you buy it brand new.
NOTE - you don't have to do this everytime you use it. Also, don't leave water in it or it will rust. if it does you just scrape of the rust and oil it again. When you wash it with water and you're done, just turn the heat on for a few minutes and all the water will evaporate.

Two things I would add:
1.) Never, and I mean NEVER poke your steak with a fork to turn in over. This will damage the meat and the juices will run out. Sure way to make it chewy.
2.) After the steak is perfect and before you serve it, always let the meat sit for 5 minutes minimum. This will allow the juices to redistribute inside the steak and prevent them from leaving the meat asap once you cut the first piece off.
Voila. You have your perfect steak. Enjoy!!
