Two things I would add:
1.) Never, and I mean NEVER poke your steak with a fork to turn in over. This will damage the meat and the juices will run out. Sure way to make it chewy.
2.) After the steak is perfect and before you serve it, always let the meat sit for 5 minutes minimum. This will allow the juices to redistribute inside the steak and prevent them from leaving the meat asap once you cut the first piece off.
Voila. You have your perfect steak. Enjoy!!
