I love the idea of using Guinness! Will have to give that a try for sure.

I like to use a beer with a strong flavour, so things like bud or whatever else are out. Stella and Grolsch work nicely, but a "real beer" is even better. A strong flavour and a good amount of fizz is the key.

One other tip I tried before but with less success is to put some vinegar into the batter mix before frying, but it made the batter taste a little odd in my opinion.

eh, probably meant to be malt vinegar knowing the Irish. Adding acide at that point would be weird, but using it to marinade the fish prior to battering and frying would be a valid option.

Yeah, it really do much to the batter. Just made it taste a little bit burnt.

Marinating the fish in vinegar could be good! I have a recipe for a spicy fish and chips I need to test out too. 🌶

sounds great! I've got some shark I'm thinking about for this week.

Jealous! Never tried Shark, one of the few fish I haven't.

My Korean market gets it in occasionally. It is tough and definitely requires a marinade.
