I like to eat healthy, but on "cheat day" I might be naughty and have something that isn't.
One of my favourites is fish and chips, but I always used to struggle to get the batter right when making it myself.
Not anymore!
I picked this batter recipe up from a friend of mine, and the "secret ingredient" came from a TV show (I forget which one).
Here is the recipe:
Perfect Fish Batter
- Take one small can of beer (330ml/355ml), and empty it into a mixing bowl. (A stand mixer works really well for this). Be careful to not make it fizz too much.
- Add 180grams (12 tablespoons) of self raising flour (never use plain/all purpose) to the beer and mix well.
- Season the mixture with salt and pepper. Then finally,
- Add the secret ingredient - One egg white that was been whisked into a fluffy consistency. Stir/fold it gently into the mixture.
You now have the perfect fish batter ready to coat whatever fish you want.
Bonus fish and chip secret
Always dry your fish with kitchen towel and sprinkle it with flour before dipping into the batter.

it will be the best you've ever had.

Looks fantastic and a great trick using that whipped egg white! I prefer using a Guinness for my beer of choice in my batter. Which one do you like using?
I love the idea of using Guinness! Will have to give that a try for sure.
I like to use a beer with a strong flavour, so things like bud or whatever else are out. Stella and Grolsch work nicely, but a "real beer" is even better. A strong flavour and a good amount of fizz is the key.

One other tip I tried before but with less success is to put some vinegar into the batter mix before frying, but it made the batter taste a little odd in my opinion.
eh, probably meant to be malt vinegar knowing the Irish. Adding acide at that point would be weird, but using it to marinade the fish prior to battering and frying would be a valid option.
Yeah, it really do much to the batter. Just made it taste a little bit burnt.
Marinating the fish in vinegar could be good! I have a recipe for a spicy fish and chips I need to test out too. 🌶
